Carbonara

Carbonara                                      
(From a clip out of a magazine)


2 large eggs
2/3 cup grated parmesan cheese
3/4 lb spaghetti
1 bunch of asparagus 
(halved lengthwise and cut crosswise into 2 inch pieces)
2 TBS of extra virgin olive oil
5 slices of bacon (coarsely chopped)
3 cloves of fresh garlic, finely chipped
1/4 c dry white wine
salt and pepper to taste

1) Beat eggs and cheese together in a bowl. Bring pot of salted water to boil, add noodles, cook until al dente, adding the asparagus during the last minute of cooking. Drain, reserving 1/2 c of the cooking water. Add hot pasta to the egg and cheese mixture. Toss.
2) In a large skillet, heat olive oil, add bacon and cook until crisp; stir in garlic. Add wine and cook until slightly reduced (aprox 1 min). Stir bacon mixture into pasta, adding enough of the reserved pasta water to moisten; season with salt and pepper.

Cajun

I don't know how you all feel about Cajun food, but I absolutely love it. I mean, not the meat part, but the spices they use in it. So tonight I tried out my first Cajun beans and rice meal. And it turned out FANTASTIC!! I did use beef kielbasa in it because Erik enjoys meat every once in a while, but you could easily not put it in or substitute it for a lot of things. So this is what I did....

I put 1 cup of pinto beans, dash of olive oil and 1/2 of an onion in a pressure cooker with 2 bay leaves and a dash of thyme and cooked them for about 30 min. After they we're done I put the stuff plus the kielbasa in a big skillet. Then added the following spices till the taste was just right: Cayenne pepper 1/4+tsp, Chili pepper dash or so, Thyme 1/2tsp+, Onion powder, Garlic powder, Paprika, Parsley, Salt and Pepper. And sauteed for awhile. After it was done I put it on top of some nice fluffy rice.  YUMMO!

And so the story goes, that I shall never buy boxed Jambalaya or Cajun style food again.

Dress patters!

My mom got me a fancy sewing machine for Christmas! Isn't that wonderful! I swore off sewing for so many years but now its time to fulfill my womanly skills and partake in this glorious hobby. Anyways, I'm actually kinda excited and have picked out my top 3 dress patterns to make. You see, being LDS and having to wear modest dresses now is a struggle. Considering every adorable dress that are sold in stores have something about them that just doesn't work. SO, since summer is around the corner I decided to prep and make some cute summery dresses before the weather starts screaming out tank tops and strapless dresses.

Things I want to do before I have Children:

1) Practice Yoga everyday (lifetime)
2) Become a excellent vegetarian cook (Over the course of the year/lifetime)
3) Pay off debt completely by the Fall of 2010
4) Go to Europe, Summer of 2011
5) Go to Hawaii (End of this month!!!)
6) Do some form of art everyday (Now)
7) Go to a Yoga Retreat and become a certified Yogi teacher (Winter 2011)
8) Hike the Narrows all the way through (Summer 2010)
9) Engage in my personal religious activities (everyday)
10) Learn to make soap and candles
11) Recycle!
12) Love all (everyday)

40 Days and 40 Nights-A Tribute to the Sun.

What I've realized over the course of a couple years is how rare 'physical' peace is to come by. I don't know how many people suffer from stress which in turn affects the way you sleep, the way you feel, and probably your over all attitude, but I'm sure the statistics are high.
I've always been a fan of yoga, although I haven't ever practiced it regularly, because of time, lack of experience, well and motivation. My mind tends to jump around like a rabbit on lsd which prevents me from being what I want to do, which is to give a perfect Sun Salutation or maybe the perfect Paschimottanasana. Now perfect isn't doing the pose perfect, I'm sure everyone could do a Sun salutation with no problem. The goal is to fully be in tune with your self and your god, whoever that might be. The goal is to quiet the world, focus on what your body needs to be healthy. If people consider our bodies to be these miraculous gifts then shouldn't we treat them so? No matter our age or weight we need to turn around a love our selves and love our bodies and I think it starts with focusing on them, taking time out of our busy day to take care of ourselves spiritually, physically, mentally and emotionally.
Gurmukh Kaur Khalsa has a couple of good points that I want to point out. She said "No other animal sleeps through sunrise. The cows and chickens are up and about. But humans sleep in! Getting up early will keep you young." "And service is another great way to stay young. If you have no idea why you are here, if you are confused, you won't feel fulfilled. We all have a purpose. Ask what it is that you are supposed to do. if you serve you don't have to worry and you'll always be taken care of...Serving others is one of the best ways to stay young....try new things...be attentive to what you eat....eat whole foods and organic veggies and fruits. Having a garden and growing things keeps you connected to life. We have four dogs, so I think having pets is great. And stay social. Its important to celebrate and connect". "The yoga is just part of the practice Yoga is life cake with out the frosting: Somethings missing. you need meditation. Its the frosting. "Gratitude is another really important practice-seeing how even challenges are part of your path....Learning forgiveness is key. If you hold grudges and resentments, then you get bitter. It shows on your face and in your organs. And you get old in your mind. So be grateful and forgiving. Thats the only way to truly stay young and happy." " There are upsides to getting older. Now that I'm 67 I get a 10 percent discount on Wednesdays at Whole foods. thats great. And I really like getting the discount at the movie theaters too".

Anyways, with all this being said I conclude with a 40 days and 40 nights experiment and I encourage all those to join in as well. For 40 days I will begin and end my day with my normal religious practices a long with at least 20 min of yoga. I will focus on what I'm grateful for in a home made-grateful journal. And I will never end my nights on the computer or the tv.
